Simply seasoned with salt and pepper, this salad is very easy to make!
Ingredients:
- 1 serving, multiply as needed.
- 4 to 5 cups of mixed salad
- 1/2 beetroot, grated
- 1 shallot, thinly sliced
- 1 small handful of thinly sliced red cabbage
- 1/3 cup fresh sprouts (I used fenugreek, but others are fine too).
- 1 tablespoon of cold pressed linseed oil
- 2 teaspoons of apple cider vinegar
- 1 and 1/2 teaspoons of pure maple syrup
- salt and pepper to taste
- Tempeh marinated and seared / baked or tofu.
Preparation:
Combine the vegetables in a large bowl and add the linseed oil, vinegar, and maple syrup. Season with salt and pepper, mix and taste / adjust seasoning as needed. Top with seared or baked tempeh or tofu, if desired, and enjoy immediately.
